  I had been dreaming about making some tacos based on a recipe I heard on the radio for Tacos Al Pastor. To make a vegetarian version it seemed like an easy substitute…I’d sub out the pork for seitan. And it’s always a good idea to have some sides, like rice, beans and a vegetable.   H
