Fritatta and Vegetables Recipe : Tamra Davis Cooking Show

My girlfriend Susie made this one day when we went to her house for brunch. I loved it and asked her to make it again so I could film her. The first time she made it, she used a purple cauliflower that she bought at the farmers market. Then the next time she used a yellow cauliflower and fingerling potatoes. When I made it at home I used zucchini. It’s so nice to have a recipe for something that can use seasonal and local vegetables. We also tried it with different cheeses. It always turned out tasty.  This is a great brunch dish that can be made ahead of time and it also makes a delicious lunch with a salad.
