A great standby when you have unexpected guests. Hungry Nation's 'Tamra Davis Cooking Show' features great recipes for cooking delicious meals and food for your family.  Tamra is a real Mom cooking real food.  New episodes every Thursday. Hungry Nation Website:  http://www.HungryNation.tvhttp://www.TamraDavisCookingShow.comTwitter: http://www.twitter.com/HungryNation -----Recipe: Fakin Bacon, Tomato, Broccoli and Pine Nut Pasta(For 4) 8 slices of Fakin Bacon or 2 slices of substitute bacon per person4 medium tomatoes – chopped up1 cup of broccoli – cooked chopped (or other green, kale or asparagus)2-3 cloves of garlic minced2 tablespoons of olive oil2 ounces of goat cheese – optional1/3 a cup of pine nuts toastedRed pepper flakesSalt and pepper to taste1 16 ounce package of spaghettiParmesan cheese Cook the spaghetti. Meanwhile – In a serving bowl put in your minced garlic with the olive oil. Add the chopped tomatoes. Boil your broccoli in a ½ a cup water till it’s green and slightly softened. Add this to the tomatoes. Fry up your Fakin Bacon in a bit of oil till it’s crispy. Chop into bits. (Don’t wash the frying pan just yet) Add this to your bowl. Toast the pine nuts in the frying pan. Set aside. Drain your pasta. Put it in the frying pan. Add the bowl of all your bacon, broccoli, nuts, and tomato sauce. Heat it up. Sometimes I add another drizzle of olive oil or add some goat cheese to give it a bit of a creamy sauce.Season with red pepper flakes, salt and pepper. Top with the pine nuts. Mix the dry ingredients together in a separate bowl. Mix the wet and the dry together. Add the sliced bananas. Stir them in. Put a small amount of butter or oil in a large frying pan. Let it heat up evenly and start to pour pancakes. Make sure banana is in all the pancakes. When the pancakes start to bubble, turn them over. Take a peak first to make sure the underside is cooked until lightly browned. Serve with butter and maple syrup. *Mike doesn’t eat dairy so I substitute the cow’s milk for rice milk for him. Same with the crepes. All  the seeds and nuts provide so many beneficial vitamins, minerals, fats and  proteins. It’s also a great recipe to experiment with.      Hungry Nation's 'Tamra Davis Cooking Show'  features great recipes for cooking delicious meals and food for your family.  Tamra is a real Mom cooking real food.  New episodes every Thursday.      Hungry Nation Website:  http://www.HungryNation.tv   http://www.TamraDavisCookingShow.com  Twitter: http://www.twitter.com/HungryNation       Recipe:      Granola  (Makes 6 cups)      3 cups of organic oats  1 cup of shredded coconut (sweetened or not)  1 cup of chopped nuts (almonds, walnuts or  pecans)  ½ cup of seeds (sesame seeds, sunflower seeds or  pumpkin seeds)  ½ teaspoon of salt  ½ a cup of honey or maple syrup  1/3 a cup of sunflower oil  ¼ cup of apple or orange juice  1 teaspoon of vanilla  1 cup of chopped dried fruit (raisins, dried  apricots, apples, cranberries…)      Heat oven to 350. Add all the dry ingredients  together in a large mixing bowl. Stir it up. Add the wet ingredients together in a  separate bowl and stir them up. Pour wet over dry and coat thoroughly.  Lay the granola flat and even in a shallow pan  (best is a heavy duty baking sheet with edges). Make sure it is not more than one  inch thick or you may need to use two pans. Bake for about 20 minutes. You  need to check and stir it up after about 10 minutes. Don’t let it burn. Transfer  back to the bowl and stir in dried fruit once it’s cooled a bit. Serve with  your favorite milk or yogurt.  Store the rest in an airtight jar.  *I’ve been making homemade Granola Bars for the  kids lately. I take the Granola and put it in a food processor with just enough flax  oil, butter and honey so it can stick together. You can add a tablespoon or  two of brown sugar here. Then I add a few organic chocolate chips and form it  into a shape on my silpat that’s sitting on my cookie sheet. Mix and then slowly add the water. Blend until it forms a dough. Roll  into a ball and then wrap it up in wax paper or plastic and put it in the  refrigerator while you make the filling. (around 20 minutes)  *you can always use a store bought brand. Just  watch out for too many bad ingredients.      Easy Quiche  1 pie crust  3 eggs  1 cup of milk  1 – 1½ cups of cheese (jack, cheddar, goat…)  Optional – 1 cup of whatever else you want to add  (broccoli, Fakin Bacon, cauliflower, zucchini, red pepper, spinach…)      Blend milk and eggs and pour into the pie shell.  Add cheese and optional ingredients. Bake at 375 for 30-40 minutes or until firm.      Quiche with Red Chard, Dried Cherries, Pine Nuts  and Goat Cheese  (for 4 – 6)  1 pie crust –  3 eggs  1 cup of milk  8 ounces of goat cheese  1 cup red chard cooked and chopped  ¼ cup of dried cranberries or dried cherries  ½ cup of pine nuts toasted  Salt and pepper      Preheat oven to 375.  Cook your chard in a small amount of water.  Strain and chop.  Toast your pine nuts with a pinch of salt in a  frying pan.  Mix together your eggs, milk, cheese (either  shred it or crumble the goat cheese) chard, cherries, pine nuts, about a ½ teaspoon  of salt and pepper to taste. Pour your ingredients into the pie shell.  Place on a baking sheet and bake for 30-40  minutes or until firm in the center. It’s so nice to have a recipe for something that can use seasonal and local vegetables. We also tried it with different cheeses.
