Tortilla Espanola

My Spanish grandmother used to make these tortillas with green beans. Slice them the long way then the tortilla has a cool stringy texture. Muy delicioso!

ola! soy de españa y tu receta se parece mucho a la de verdad (por lo menos es mucho mejor que otras que he visto)aunque creo que hay algunos errores como por ejemplo:
las patatas hande ser mas grandes y de mayor calidad
tienes ue hacer la tortilla en un recipiente mucho mas pequeño ara que salga mas gruesa
las patatas no se hacen asi hay que hacerlas un poco mas gruesas y amontonadas no sueltas
sin embargo me usta muco tu receta y las tecnicas principales las haces correctas cosa que no se puede decir de muchos.

Sorry...but it looks more like a frittata for me... tortilla española is thicker and the potatoes are not crispy...just "boiled" in olive oil... and as "The Tapas Lunch Company " said here we usually cut potatoes in cubes...but also in slices...
Anna...I'm sure your version would be delicious and the tortilla would be well done inside

And yes!!! I miss onions and spanish chorizo!

I just tried this. Made mine with some left over sausage from my dads brekkie. should have cut the potatoes just a little thinner but bar that deli.

Great video, but, no onions?  There are some subtle differences to this technique to make a really authentic Spanish tortilla (although there are obviously many differences within Spain).  Firstly, peeled white potatoes are almost always used and the cut is more like cubes rather than thin slices.  Basically, you don't want crispy, which is why a  thicker cut helps; but most importantly, slow frying of the potatoes and onions together is what produces the best result - we're talking 30-40 minutes until the potatoes are very soft but definitely not crispy.  That is what one of the comments refers to by 'boiling' the potatoes in olive oil.

I've made a delicious version of this.  However it was a bit thicker.  I sliced boiled potatoes and caramelized onions in a cast iron skillet before adding layers of thin sliced potatoes.  I poured the eggs in the hot pan cooked for a few minutes and slid it into a hot oven for about 5-7 min.  It was thicker, the potatoes were layered and it didn't seem as eggy as yours...but heck it was good.

great. now I wanna eat again.  yum!

Good stuff guys. I was always taught to cook potatoes and onions prior to adding the eggs. Also, the best part about making tortilla is that it can be eater hot or cold. Toss some coarse salt on top and you're good to go.

I have a recipe somewhere that requires no flipping - you just stick the frying pan in the oven after a while. Not sure how authentic it is, but it does taste very good and has a slightly different texture. I can post the recipe if there's any interest.

Dude, next time instead of having the tortilla on the plate and turning the plate over onto the pan, transfer the tortilla to the plate, place the pan upside down on the plate, hold the two together, then flip them both together. Less mess. Takes some arm muscle though depending on the size of your pan.

A good tortilla dish? 2 words:

Chorizo and Eggs.

This is going to sound silly... but someone needs to remove the cheeseburger from the Hungry Nation intro thing... I have nothing against burgers generally but it just doesn't seem to go with the theme of YUMMY FOOD that you actually WANT to eat.
Am I being a weirdo? Probably but thought I'd put it out there.

I'm going to make one tomorrow ... until I lerned how to make one in Malaga ... I hope the variation will be as good as it looks like ;)

mmmmmm, does not look bad, BUT, la Tortilla de patata is usually thicker, the potatoes has to be "boiled" (not fried)  on olive oil and once you have mixed everithig you fry it again but with less oil. Anyway, it looks delicious, and much better than mine..jejeje ( maybe I film my mother doing it...)PS; try it with onion
