How To Make French Onion Soup

I love French Onion Soup. I liked your video as well, because you are so passionate about food. At the end, you asked for tips. Here's one (or actually, two): I add Port wine and Balsamic vinegar. Like they do in the Les Halles cookbook from Paris. And I also add some Dutch syrup (http://nl.wikipedia.org/wiki/Bestand:Stroop.jpg) to add a real deep brown color and caramelized taste.

for cold autumn or winter nights, I usually make an onion-wild mushroom soup, adding some fresh parsley, thyme and pinches of mustard, with the same toast-cheese garnish...mmmmm... can't wait for September!! (my fiance adds also some chicken... He's a meat lover, what can I say?!!) Keep up the great work!! :-)

Made this for dinner and am typing between wonderful, yummy yummy bites. Threw in some chopped up wild mushrooms and melted a combination of gouda, cheddar, mozzarella and gruyere on top. I am so happy right now. Thank you for sharing such a wonderful, non-intimidating recipe.

For cutting onions the only thing I've found to work is to remove the bulb first then cut as needed.  I've tried the candle, the fan, cutting them in a bowl of water.. freezing them.  I've tried it all and this is the only way that it works for me.

French Onion is one of my winter favorites. This recipe is a bit different than mine but I'm going to try this without the alcohol.  I also make my bread into homemade croutons.  I find that this makes diving into the bowl a bit easier and you get a nice chunk of bread in almost every bite.  Delish!  I know what I'm making this weekend.

While I love onions, I was never a fan of french onion soups I've eaten, so have never had an urge to make it.   Oh, how you've changed that, and I know what I'm making for dinner tonight!

Loved it. Made a version like this with a beautiful pinot noir, a yellow, 2 white, a red onion, and a scallion. The different onions were fabulous! Also, used gruyere and asiago for the combined cheeses. Went over very well!

Hey. I'm still a bit of a cooking noob so this may sound like a silly question, but does it matter what kind of onions you use? Obviously not red but I was wondering if you should use white, yellow, sweet, etc...

Hi everyone, Just if you want to have extra flavours in your "gratinée à l'oignon" you can use duck grease instead of your butter and olive oil. This is what we are doing in south western France and the bread doesn't need to be fresh. this receipe is something that was done not to loose bread (as what you call "french toast", pain perdu in french ;-)). Just think about slicing your bread before it's getting too hard !!!!
By the way, I really like your french accent. It's so cute ;-)

so...don't judge but, my grandmother told me to light a candle near where you are cutting onions and keep a piece of white bread (of the wonder variety) half way in your mouth while cutting onions and it blocks the fumes from hitting your eyes. i know how this sounds. but it totally works.

I know it makes me look like a freak but when I have to chop this many onions I blow upward across my eyes. It helps to keep the evil onion vapor at bay and away from the eyes. Someday when I have a fancy kitchen I'll have little face fans that hoist down from the ceiling for when I chop onions.

Where was Max during this episode? I also noticed how you had this wonderful citrusy salad a couple of episodes ago, and now you have hearty french onion soup. That soup looks so much better than the one I made before christmas. I didn't simmer to reduce for an hour, though... Thanks for the great video!

Put your onions in the fridge or run them under cold water and they won't burn your eyes like that.

amazing this looks so good and reminds me of some fantastic times in fance. I think I have to go at least to Strasbourg for the Weekend to get a good onion soup. Thank you so much .... love your videos !!
