Very similar to the recipe I use for pizza crust. Might be interesting to try frying it... Using a bread maker for the kneading is more convenient and the house still smells wonderful!
mm, fried bread. it's actually also quite similar to a recipe i use for regular old bread. bread machines can be great tools but personally i like kneading by hand...that way i can really control the consistency and chewiness of the bread. but i'm a really hands-on person. yay for baking :)

I love aloo paratha, which are Indian potato filled flatbreads. The dough is super simple-- 1 cup flour, 1/2 cup water (maybe less, add gradually), a little salt and suger, and a teaspoon of baking powder. You make a sort of dumpling with the dough and potato filling, then roll them flat and grill them. Amazingly tasty!

Would love to taste that flatbread with some toppings, although I'm sure it was delish plain, too. Would it make a good caprese sandwich with some fresh mozarella, tomatoes, basil, salt & pepper? Or is it too thick?
It would probably work very well as a foccacia-like sandwich base. I'd just make sure to toast or broil it with some olive oil first to soften it back up (flatbreads can get a little hard when cool).
