How To Make Asparagus Risotto

Haha I was halfway through making this then we had an EARHQUAKE. So i had to sit for an hour staring at half cooked rice until the power came back on!

If you like asparagus try to boil them (without the hard end) until they are soft, and then you can eat them with a fried egg: the best thing is dipping the asparagus into the creamy yolk!
Plus, as you said, truffle oil or a tiny tiny tiny bit of grated truffle on the egg it's like heaven to eat!

My favorite thing to do with leftover risotto is to form it into little patties, coat the patties in bread crumbs and fry or grill them. My roommate has been making risotto all the time lately with the last of the butternut squash from a friend's garden, so I've been eating these often. I like to eat them for lunch with blue cheese sprinkled on top and a light salad on the side. Yum. I'm looking forward to trying the same thing with leftover from this asparagus risotto (granted I don't eat it all the first time around).

I love risotto I like to make a lemon risotto and use different ingredients (sometimes shrimp or maybe artichoke hearts).

What I love about risottos is that you can put in just about anything that you like and will almost always have a successful dish. People are often afraid to attempt them because they think the constant stirring and reducing of liquid is an exact science and unforgiving. But as you've shown so nicely, it really isn't hard! Lovely and yummy looking dish...can taste the creaminess and the healthy crunch of the asparagus! Thanks! Mahm

I'm not a fan of risotto, but I gotta try this. Got any ideas for snack foods that can be made in bulk, frozen long term, and can be easily microwaved? I thought about it when having some (store bought... ugh) Jamaican beef patties. I get into hardcore cooking moods a lot, but sometimes can be lazy (especially when I'm extremely hungry).
